Do I need to know exactly where my property line is?

Yes, before anything is built. A fence over the line is a legal problem and the fix is moving it. The survey pins are the answer; an old fence line, a hedge or a neighbour's recollection are not. Many people set the fence a few inches inside the line deliberately so there is no argument later.

How deep do the posts go?

Below the frost line, and generally a third of the post's above-ground height, set in concrete. Post depth is the single thing that decides whether a fence is standing straight in ten years, and it is also the easiest thing to save money on where nobody can see it.

Which side gets the good side?

Convention is that the finished side faces out, towards the neighbour and the street. It is worth agreeing before the build rather than after, and some fence styles are built the same both sides specifically to avoid the conversation.

Do I need a permit?

It depends on the municipality and often on the height, and pool barriers are governed separately by code. An HOA may also have rules on material, height and colour that are stricter than the city's. Both are worth confirming before material is ordered, not after.

Can a fence follow a slope?

Two ways. Stepping keeps each panel level and leaves triangular gaps at the bottom; racking follows the ground so the rails run parallel to the slope and there is no gap. Racking looks better and matters if the fence is containing a dog, but not every material will do it.
